Miracle Tree's Recipes - Fancy a Halloween-inspired Moringa Cupcake?

Step away from traditional cupcakes and try a healthy, moringa-based Halloween-inspired cupcake!

With Halloween around the corner, you may want to indulge on something sweet by making a themed dessert. And while the spooky season may signal quintessential candy, these high-calorie and sugar-loaded items can easily be replaced with healthy Halloween-inspired, homemade foods. Here is an interesting spin on a traditional cupcake, which is equal parts healthy and delicious. All you need is the Moringa Superfood Powder, which is rich in antioxidants, vitamins, minerals and amino acids, to enhance the nutritive qualities of a sweet delight. 

Ingredients

For the cupcake: 

  • 1 ¼ cup all-purpose flour
  • 3 tsp Miracle Tree’s Moringa Superfood Powder 
  • ¾ cup milk (full fat, almond, soy or oat) 
  • ½ cup olive oil 
  • 1 egg 
  • 1 tsp baking powder 
  • ½ tsp baking soda 
  • ¼ tsp salt 
  • ½ tsp vanilla extract 
  •  ¾ cup cane or brown sugar 

For the icing:

For the cupcake: 

  1. Preheat the oven to 350 degrees. 
  2. Mix all the wet ingredients—milk, eggs, oil and vanilla extract in a large bowl. 
  3. Mix the dry ingredients in another bowl and sift through a sieve. Slowly add them to the wet ingredients and whisk until you have a smooth batter. Make sure there are no lumps. 
  4. Line the cupcake molds with paper liners. 
  5. After whisking, take a large spoon or cookie scooper to pour the batter into paper-lined cupcake molds. 
  6. Bake for 20 minutes. Once done, check to see if the batter is completely baked by inserting a toothpick or a knife inside one. If the consistency is proper, they are done. 
  7. Set aside for 10-15 minutes to cool. 

For the icing: 

  1. Whisk the heavy whipping cream, sugar and vanilla extract together till the mixture becomes thick. 
  2. Add the moringa powder to the mixture and whisk until it is mixed properly. 
  3. Pour the icing in a piping bag and swirl it on top of the cupcakes. 

Traditional Halloween cupcakes are high in sugar and artificial ingredients like food coloring. Moringa is an excellent natural food stain and will give the cupcakes and icing a brilliant green color. You can amp up the cupcake as the Wicked Witch of the West or the Green Monster by adding embellishments or swirling your icing decoratively. You can keep trick or treating with this Halloween recipe, guilt-free.
