Ingredients

  • 1 cup wheat bran
  • 1 cup whole-wheat flour
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ cup unsweetened applesauce
  • ½ teaspoon sea salt
  • ½ cup buttermilk
  • ¼ cup coconut oil
  • 1 large egg
  • 1 cup small red grapes
  • ¼ teaspoon moringa
  • 10 teaspoons unsweetened creamy peanut butter
  • 1 tablespoon water
  • 1/4 cup seedless jam

Directions

  • Place ten paper liners in a 12-hole muffin tray, and preheat the oven to 350 degrees F. Combine the wheat bran, flour, sugar, baking soda, cinnamon, moringa and salt in a medium bowl.
  • In another bowl, combine applesauce, buttermilk, coconut oil, and egg. Then, whisk in the flour mixture. Once combined, add in the grapes.
  • Distribute half the batter in the muffin cups with liners. Next, add one teaspoon of peanut butter on top of each, followed by the remaining batter.
  • Bake for 25-30 minutes or until a wooden pick inserted in the center comes out clean. After five minutes, remove the muffins from the pan and place them on a wire rack to cool.
  • Combine the jam and one tablespoon of water in a small bowl. Cover the muffins with the jam mixture just before serving.

Tiramisu

Ingredients

  • 60 grams of oat flour
  • 1 teaspoon baking powder
  • ½ tablespoon maple syrup
  • ½ cup milk
  • 3 tablespoons strong black coffee
  • 80 grams thick yogurt
  • 1 tablespoon vanilla protein powder
  • 2 tablespoon cocoa powder

Directions

  • Prepare a loaf pan with baking parchment paper and preheat your oven to 350°F.
  • In a small mixing dish, combine the milk, oat flour, baking powder, and maple syrup. Pour the mixture into the loaf pan. Bake for ten minutes.
  • Combine your yogurt and protein powder to form a smooth mixture.
  • Once it is baked, cover it with coffee and let it sit for approximately a minute to absorb. Then, remove the cake from the tin carefully.
  • To serve, divide the loaf in half. Top one part with half of the yogurt, and sprinkle with cocoa powder. Add the second piece and repeat the yogurt and cocoa procedure.

Chocolate-Dipped Bananas

If you want to whip up a Valentine’s Day dessert with minimum effort, you must try this recipe. The sweet bananas dipped in bitter dark chocolate are an absolute treat. You can satisfy your sweet cravings while getting all the health benefits of bananas and dark chocolate.

Ingredients

  • 2 bananas, peeled and cut into thirds
  • 6 ice-cream sticks
  • 2 cups dark chocolate, roughly chopped
  • 2 teaspoon coconut oil
  • 2 tablespoons unsweetened shredded coconut
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped cashews
  • ½ teaspoon moringa
  • ½ teaspoon sea salt

Directions

  • Cover a baking sheet with waxed paper. Cut the bananas and put an ice cream stick into each piece of a banana.
  • Place them on the baking sheet. Freeze for at least one hour or until firm.
  • In a heatproof pan, combine the chocolate, moringa and coconut oil; bring to a boil over a pan of simmering water. Stir frequently to prevent it from burning.
  • One by one, dunk each slice of banana in the melted chocolate, spooning more chocolate on top to completely coat them.
  • Top them with shredded coconut, almonds and cashews. Then sprinkle some sea salt.
  • Refrigerate them for around 15-120 minutes before serving this scrumptious Valentine’s Day dessert.
